The chef behind this gastronomic gem is Andrés Salas, from Los Chamacos Taquería in Castellón, Spain. He managed to capture the essence of Nayarit’s coastline and turn it into a unique culinary experience.

His creation took the spotlight at the national competition The Best Taco in Spain thanks to a masterful blend of native ingredients and contemporary techniques. But beyond its technique or presentation, this taco is a heartfelt tribute to the cuisine of the Mexican Pacific—highlighting, above all, the signature flavors of Nayarit.

The star of the dish is pescado zarandeado, an undisputed symbol of the region.

“We were inspired by the grilled flavor of pescado zarandeado, typical of Nayarit, and brought it into taco form. That’s where it all started,” says Chef Salas.

The result: a perfect harmony between Mexico and the Mediterranean, between tradition and innovation. A flavor journey that, according to the contest jury, is “a direct trip to the coast of Nayarit.”

The taco is currently sold for €5.50 in Spain and has caused a stir among food critics for its boldness, balance, and unmistakable flavor.
